How to make fat and fluffy pancakesI love pancakes. I mean I REALLY LOVE THEM! Fat, thin, lemony or savoury I could devour a whole batch on my own. Until recently I couldn’t get the American style ones to puff up like they do over there. Have you ever tried to make big, fat, fluffy American style pancakes before? When I’ve tried out and tested recipes before I used self-raising flour or added baking powder to will them into rising up just that little bit more but it was only after scrolling through the web that I found a sneaky secret.

What’s the trick?

The trick is pretty obvious when you think about it. All you have to do is separate the eggs and whisk up the whites till they’re really stiff then fold them into the batter at the end with as little mixing as possible. Then watch those babies rise up when you cook them.

And that’s what I did with this recipe and it worked a treat. Now, in all fairness, I made a batch of these and they really puffed up and then Mr MT who ‘doesn’t like pancakes‘ came along and ate one. So I had to eat one (you know – quality control and all that) and then there weren’t enough to get the shots I wanted so I made another batch. By that time they had cooled right down and some of their puffiness was lost. But if you eat them straight from the pan they are even fluffier than in the photos.

So those lovely people over at JosephJoseph asked if I would like to write this post and they sent me a whisk, a sieve and a food storage set. And I had a good old play around with them. The whisk has a fantastic silicon blade which makes it easy to scrape all the ingredients from the bowl but the whisk! It’s fantastic. I knew it was a self-tapping sieve but I didn’t expect it to be that good. It really does cut the act of sieving ingredients down in half but it also doesn’t seem to let any of the flour out of the bowl (like it usually does). You have more control – even though the sieve is moving more. I love that sieve. It’s a new fave. You can see a video of the kit in use here

Makes 8-10 yummy pancakes

How to make fat and fluffy pancakes

  • 135g Plain flour
  • 1 tsp baking powder
  • 1 tbsp caster sugar
  • 125ml milk
  • 2 eggs - separated
  • 2 tbsp salted butter- melted
  • oil for cooking
  1. In a bowl sieve all the ingredients together.
  2. Separate the egg yolks and add them to the milk and butter. Whisk together then add to the dry ingredients.
  3. Whisk up the egg whites in a clean bowl till stiff. Fold into the batter till just incorporated.
  4. Heat a frying pan till very hot then add one spoonful of batter to the centre. Once the edges start to brown up and you get air bubbles on the top of the pancake, flip it carefully over.
  5. Cook on that side for a further minute or two

After I made all those pancakes I decided to pack some away for when Darcey got home. I always wait for them to cool completely before stacking them in an air tight container. If you place pieces of silicon paper in between each one they don’t stick together. Then, when I want to heat them up I can either pop them on a baking tray in the oven or my preference – put them in the toaster. In December I was writing the ‘Girl About the house’ Spring cleaning feature for Prima magazine. As usual I was working in a different time zone to the normal world! I contacted the lovely PR for E-cloth who wanted to send me a sample of a new kitchen cloth to try out.

I’ve been a big fan of E-cloths since I was the ‘Classy Cleaner’ on Woman & Home and anything cleaning related came my way – need to know which vacuum to buy? I’m your girl (It’s anything Miele by the way!) So, I’ve been using E-cloths for years and years. They say that they last 300 washes but mine have lasted a whole lot longer than that.

E-cloths are an eco way of cleaning your whole home. No need to keep replacing kitchen towels- just use the cloth, machine wash it and you’re good to go again. You don’t need to use chemical cleaners – just spray some water and wipe. Now that for me was a winner fortwo reasons.

  1.  I don’t like to use too many chemicals as Darcey had Eczema a lot when she was younger and anything remotely chemically would set her off.
  2. I think we need to build up a certain amount of resistance to everyday dirt and bacteria. My kids are hardly ill and I’m sure it’s becuase I let them get dirty when they were little. It would be great if I could stop Darcey from being permanently sticky even though she’s now nine but hey ho! Maybe I should E-cloth her!

I use E-cloths to wipe down kitchen surfaces, clean bathrooms, polish windows, make mirrors  sparkle etc. I do use spray cleaners but not when I’m just picking up bread crumbs or cleaning up the sticky one’s honey. You just don’t need to

So, while I was expecting one kitchen E-cloth with the clever scourer corner (as seen below) Kitchen Ecloth

I ended up with not one but two of the Home Cleaning set which is 8 cloths, plus E-cloth tea towels and washing up pads. Now, being the honest person I am I called the PR to let her know and she said I could keep them all! How generous is that? So, after sharing the tea towel love with my mum and sister I said I would offer the rest as a giveaway to my lovely readers.

I’ve been using this set all through the Christmas and New year break and they’re so plush (I probably should have gotten rid of my old ones a while ago!) They work so well. My favorites are the scourer edged one for stubborn dirt and the thick window one which works a treat on my high gloss kitchen units. The yellow bathroom one is the thickest. It’s like a really fat fleece blanket. It holds a ton of water.

I love doing book reviews – well, actually I love reading new cakey books and getting inspired and being desperate to share what I’ve found with you guys, but when it comes to the actual writing of these posts I always find myself waffling on and on and making them way too long. And that was the case with Lindy Smith’s Mini Cakes Academy, by David and Charles. There was just so much to share.

Lindy Smith Mini cakes Academy I’ve Interviewed and reviewed a Lindy Smith book in the past and there’s one thing you should know about her. She works REALLY hard and is really creative. She has a new book coming out in what feels like every five minutes and they are all so different and totally inspirational. How does she do it?

The latest book is just the same. Jam packed with clever hints and tips on how to get different effects, some of them basic for the beginner and some of them more challenging but all inspirational. Sometimes you just need to be shown a new tool or colour combination to give you a whole new idea for a cake. One piece of inspiration and the book’s a winner – don’t you think?

What I love about this book are the simple ideas executed to perfection. Whether it’s the stunning colour combinations of the Rosette cake or the cute washboard sides on the beach hut cakes. The way some simple plunger cutters have been used to make an elegant Christmas tree cake look fabulous or the clever use of a flower and some piping to make the cutest diddy wedding cake. Also, there’s buttons. I love a sugarpaste button on a cake!

Lindy Smith Mini cakes Academy Why I think Lindy’s books are so great is that no matter what level you’re at there are plenty of photos to describe the techniques so you can understand the way to make every element of decorating. Some books only have one step shot and explain the rest with words and you just can’t get a handle on what they’re on about. Here Lindy explains everything in clear detail and shows you too. What else is in the book?

As well as seeing where the inspiration for each cake comes from there are templates and recipes (for the main size cake tins when making small cakes) and the sticky toffee cake sounds really deelish. There’s even a vegan chocolate cake in there. There are recipes to make your own sugarpaste, pastillage, flowerpaste and of course buttercreams and ganaches.

“Wowzers!” I hear you cry! Can I win all of that! Well yes you can.

Pyrex is 100 years old this year so when they asked if I would like to do a giveaway here on CakesBakesAndCookies.com I jumped at the chance. I mean what baker doesn’t love a bit of Pyrex kitchen kit?

So, what’s in the bundle?

The big bowl

I’ve had a 3.0L Pyrex Glass Bowl,small Pyrex bowl and Pyrex jug in my ‘essential’ kit for as long as I can remember. I use the large bowl to mix ALL my cake mixes in as I now use my hand held whisk for practically everything. That big bowl is the perfect size for cakes up to 10″ and you can’t say that about many mixing bowls!

The small 1 litre Pyrex Bowl,  I have is so old now. It’s got a ton of scratches at the bottom where I mix eggs for omelettes and have done so since Tim and I first moved in together. So, it must be about 18 years old! Boy am I showing my age now! The thing I use it for most of all now is warming up butter. I shared this Mary Berry tip a few years ago where you place cold butter from the fridge in the bowl then add tepid water and leave it for ten minutes so the butter softens up to room temperature. My kitchen is so cold – especially in the winter so I do this for most cakes. The softer the butter the better the cake mix.

The Small Jug

The small 0.5 l Pyrex Jug is what I use to measure (no brainer really!) but I also always break my eggs into this jug when making cakes. It’s become a bit of a ritual habit for me. Do you know that when you break eggs into a glass container any tiny bits of shell that get in the mix sink to the bottom, so you can lift the jug up and look underneath to check that there aren’t any fragments lurking down there.  I used to have the big 1 litre Pyrex jug but I dropped it and was really gutted. It’s another great sized piece that has so many uses. I must replace that some time!Pyrex giveaway jug

Kitchen lab precise measure

This is a really clever device. It was new to me but since I’ve had my hands on it I’ve used it tons. The Pyrex test tube design  has this clever rubber base so it can stand up while you measure really small amounts of liquid into it so, when a cake calls for 4 tea spoons of vanilla essence you can measure them in one go. It can measure up to 50ml, 1 ½ Fl. Oz, 6 tea spoons and 3 tablespoons, handy when you’re baking big cakes. You don’t loose count when you measure in one go!

I love baking trays. I don’t know any keen baker who doesn’t. You just can’t have enough of them can you? This Pyrex asimetriA BAKING TRAY  has a raised surface and is designed to give you an even distribution of heat so those cookies will all come out the same. It’s a really good size. I can get 30 cookies on just this one tray.

Loaf tin

This Pyrex asimetriA Loaf tin is the only part of this bundle I haven’t baked with yet. I’m thinking about doing a long thin cheesecake with it next month with a line of cherries down the centre. What do you think? It’s not your traditional size loaf tin. It’s longer (26cm) which I really like. It gives you a point of difference… and more cake. What would you bake with one of these?

Muffin tin

This Pyrex asimetriA MUFFIN TRAY has really tall, straight sides. I’m a bit rubbish when it comes to muffins. They never seem to rise up as much as I’d like, but when I used this tin to make cupcakes a couple of weeks ago they came out really neat and even – just what I wanted. The straighter the sides of the cake wells the more professional the cakes look in my opinion.

These Pyrex asimetriA sandwich tins are probably the most useful size you can get – or at least they’re the size I use the most. So with that in mind I now have four 8″ sandwich tins. Let’s see now. How many hands can I see? My, my there’s a lot of you out there.

Do you remember a few months ago I shared my first ever attempt at baking Brioche in front of a whole lot of other bloggers….and it all went wrong? Well those lovely people over at Brioche Pasquier have given me a fantastic hamper to give away this Easter.

Brioche Pasquier are THE masters of the brioche and croissant. It all started back in France in 1936 when Gabriel Pasquier opened his little village bakery. He passed his secret technique on to his sons who still use a similar traditional levain to bake Brioche Pasquier products today. It’s that slow process of raising the dough that gives them that super light texture and means that there’s no need to add additives and makes them totally deelish!

Since the workshop we’ve been buying Brioche Pasquier croissants and Pitch brioche like they’re going out of fashion. Just this Sunday Tim made me a fried egg and cheese croissant. Have you ever had one of them before? Believe it or not we had this snack for the first time 16 years ago for breakfast in a Dunkin Donuts drive through in New York. It’s divine. You lightly toast the croissant, fry the egg and place it on the open croissant then place a slice of cheese on top so it starts to melt straight away -We use Emmental cheese. A quick squirt of ketchup and I am one happy lady!

The other Brioche Pasquier product we love are the Pitch brioche – especially the chocolate ones. I would say that we buy them for the girls for their packed lunches – as they come individually wrapped and have a really long shelf life, except they don’t have a long shelf life in our house! The packet containing 6 – which we buy on a Sunday, should be enough for a few of the girl’s lunch time treats – except there are four of us at home and there’s not usually enough left for one lunch come Monday! Oopps!
