I love the passover baking recipes my mum bakes. They’re totally a family tradition and so easy to eat… I mean bake! Pesach isn’t the same without cinnamon balls, almond macaroons or Plava cake. We love pancakes in our house. In fact I have them every day for second breakfast – healthy ones of course made with bananas and topped with yogurt, seeds, blueberries and raspberries and seeds – of course. Can you see a theme here? I did say they were my faves, didn’t I? I tried out these hazelnut macaroons when I had some nuts left over from another recipe. Baking with Hazelnuts makes your whole home smell divine! These have a chewier consistency that I love. Heavier than the coconut and almond ones and a bit more substantial. Energy Balls Treats
I made these energy balls for my nephew earlier this year and although not all the recipes are kosher for passover, most are. I would swap out any oats with ground almonds and see how you go. Almonds are a key ingredient at passover so I’m sure they’ll taste great! Energy Ball recipe

One Egg Mini Meringues
Don’t you just hate it when a recipe calls for one egg yolk and you’re left with a sad and lonely looking egg white. That’s why I tried out making mini merignues with just one white. To be honest I wasn’t expecting it to make that many but it really does. Egg whites whipped up double or triple in size. I was equally surprised and impressed with how many it made.
