
Oh this recipe!
I have to say I’ve become a bit obsessed with it. I’ve tested it with so many variations. Different fruits. Frozen fruits. Fresh fruits. With just ground almonds. Without any ground almonds. Let me tell you THIS one is the very best version. Although the apricot one was a pretty good success too!
Cherry Almond Slice Recipe
I baked this to take to my sister’s house for Friday night dinner with the family. It’s just the right size to have a slice each and a tad more too boot. It works as a pudding but also as a slice to have with a cuppa.
I really like the sweetness of the cake combined with the tartness of cherries. I think I prefer the apricots to the cherries as they have a tartness that just works.

Custard on the side
Because this Cherry Almond Slice Recipe uses so many egg whites I didn’t want to be left with a ton of yolks so I decided to make custard to serve with it. Have you ever made home made custard from scratch? It is goooood! It has a richness that shop bought and powdered versions just can’t live up to. Go give it a try. You can find the recipe here

You choose the fruit
I’ve already mentioned that I like the apricots version of this recipe but the reason I made that one was because I had some knocking about that were starting to wrinkle. I simply sliced them in half, removed the stones and put them cut side up in the cake mix. Deeelish!
Next on my ‘to try list’ is with rhubarb. The sweet and tart combo is a total winner.
I would also say that I have made this with fresh and frozen fruit. Both work and I didn’t adjust the timings for baking when using frozen as they defrost whilst baking without going too gooey.

Cherry Almond Slice
Notes
I used frozen cherries but any fresh or frozen fruits will work.
Ingredients
- 9 Egg Whites
- 330g (3 cups) Ground Almonds
- 200g (1 ½ cup) Icing sugar
- 225g (1 ¾ cups )Self Raising Flour
- 150g (2/3 cup) Melted butter
- 300g (2 cups Cherries – fresh Stones removed. or use frozen.
- 50g Granulated sugar))
Instructions
- Preheat the oven to 180℃ (160℃ Fan)
- Line a 25 x 35cm cake tin or ceramic dish with baking paper
- Place the egg whites, ground almond,, icing sugar, flour and melted butter into a bowl and combine well.
- Place the cherries in a bowl and coat in sugar
- Spoon the cake ingredients into the baking tin and add the cherries on top.
- Bake for 35-40 mins until the cake start to come away from the edges or a skewer comes out clean.
